
Melle
First documented in 1062, Melle gained prominence in 1368 when granted the exclusive market rights for the entire valley, making it the economic and service hub of Varaita.
The town suffered severely during the plague of 1630, losing about 60 % of its population. Despite gradual recovery during the 19th century,
Melle experienced rural depopulation in the 20th century a factor that contributed to preserving its historic layout and architecture
Countless votive shrines, painted chapels, and 15th-century frescoes reflect the rich Occitan-Christian tradition of the area



Toumin Dal Mel
The "Toumin dal Mel" cheese is one of the most renowned and historic cheeses of Valle Varaita. It's still produced following centuries-old traditions, using only cow's milk from Melle and Frassino areas, sourced from local farmers.


The flavor of fresh Toumin can be sweet, mildly tangy, with notes of mountain forage, while the more aged versions develop a fuller, more robust taste and form an edible whitish rind that gives this cheese its unique and delicious flavor.
What makes it even more distinctive are the cows, carefully selected rustic breeds fed primarily on grass and local hay, in strict accordance with the production guidelines.



A captivating sanctuary at 1,160 m, with medieval origins and a legend of a miraculous apparition beneath a birch tree. Expanded in the 17th and 19th centuries, it’s a beloved destination for hikers and pilgrims. The area is also famous for mushrooms!
